A creamy, zesty blueberry lemon yogurt treat you can make in minutes. Light, fresh and perfect for sunny days.
Ingredients
2 cups Greek yogurt
1 cup fresh or frozen blueberries
2 tablespoons honey or maple syrup
1 tablespoon fresh lemon juice
1 teaspoon lemon zest
1 teaspoon vanilla extract, optional
Instructions
Step1 : Mix yogurt, honey, lemon juice, zest and vanilla.
Step2 : Fold in blueberries.
Step3 : Pour mixture into a freezer-safe container.
Step4 : Freeze for 4 hours, stirring every 30 minutes for the first 2 hours.
Step5 : Scoop and enjoy with extra berries or granola.
Notes
Use full-fat yogurt for best texture. Add blueberry jam for extra flavor. Keeps well in a covered container for up to two weeks.
